Instructions
Prepare the Teriyaki Sauce: In a medium saucepan, combine soy sauce, mirin, sake (or rice vinegar), brown sugar, honey, grated ginger, minced garlic, and sesame oil.
Simmer the Sauce: Bring the mixture to a simmer over medium heat. Let it simmer for about 5-7 minutes, stirring occasionally, until the sugar is dissolved and the sauce begins to thicken slightly.
Thicken the Sauce: Add the cornstarch slurry (cornstarch mixed with water) to the saucepan and stir continuously. Continue simmering for another 1-2 minutes until the sauce thickens to your desired consistency. Remove from heat and set aside to cool slightly.
Marinate the Chicken: In a bowl, toss the chicken pieces with olive oil. Pour about ¾ of the teriyaki sauce over the chicken, ensuring each piece is well coated. Reserve the remaining sauce for later. Marinate the chicken in the refrigerator for at least 30 minutes, or up to 2 hours for a more intense flavor.
Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C).
