Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • ¼ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ½ cup milk
  • 2 cups fresh blueberries, rinsed and patted dry
  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk, or more as needed

  • Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a separate bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the vegetable oil, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream and milk. Begin and end with the dry ingredients. Mix until just combined.
  • Gently fold in the blueberries. Make sure they are evenly distributed throughout the batter.
  • Pour the batter into the prepared baking pan and spread evenly. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  • While the cake is cooling, prepare the cream cheese frosting. In a large bowl, beat the softened cream cheese and butter until smooth and creamy. Gradually add the powdered sugar, one cup at a time, mixing well after each addition. Stir in the vanilla extract. Add milk, one tablespoon at a time, until the frosting reaches your desired consistency.
  • Once the cake is completely cool, frost it with the cream cheese frosting. You can use a spatula or a piping bag to apply the frosting. Get creative and decorate with fresh blueberries if you like!
