1 cup all-purpose flour
1 cup cornmeal (yellow or white)
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups buttermilk
1/4 cup melted butter
1 large egg
4 ounces smoked Gouda cheese, shredded
Honey, for drizzling
Optional: Fresh thyme or chives, chopped
Instructions
In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together the buttermilk, melted butter, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Gently fold in the shredded smoked Gouda cheese.
Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it with cooking spray or brush it with melted butter.
Pour the cornbread batter onto the preheated waffle iron. Cook until the waffles are golden brown and crispy (about 3-5 minutes).
Carefully remove the waffles from the waffle iron and let them cool slightly on a wire rack. Cut them into bite-sized pieces. Drizzle with honey and sprinkle with fresh thyme or chives, if desired. Serve immediately.
