  • 1/4 cup melted butter
  • 1 large egg
  • 4 ounces smoked Gouda cheese, shredded
  • Honey, for drizzling
  • Optional: Fresh thyme or chives, chopped
  • Instructions

  • In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the buttermilk, melted butter, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  • Gently fold in the shredded smoked Gouda cheese.
  • Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it with cooking spray or brush it with melted butter.
  • Pour the cornbread batter onto the preheated waffle iron. Cook until the waffles are golden brown and crispy (about 3-5 minutes).
  • Carefully remove the waffles from the waffle iron and let them cool slightly on a wire rack. Cut them into bite-sized pieces. Drizzle with honey and sprinkle with fresh thyme or chives, if desired. Serve immediately.
