1 pound ground chicken
1/2 cup breadcrumbs (I prefer panko for extra crispiness)
1 large egg, lightly beaten
1/4 cup finely chopped onion
2 cloves garlic, minced
1 tablespoon Dijon mustard
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon salt (or to taste)
Optional: 1/4 cup shredded cheese (cheddar, mozzarella, or your favorite)

Instructions
In a large bowl, combine the ground chicken, breadcrumbs, egg, onion, garlic, Dijon mustard, paprika, garlic powder, onion powder, salt, and pepper. If you’re using cheese, add it now.
Gently mix all the ingredients together until they are just combined. Be careful not to overmix, as this can make the patties tough.
Divide the mixture into 4 equal portions. Shape each portion into a patty about 1/2 inch thick. I find it helpful to wet my hands slightly to prevent the mixture from sticking.
Lightly spray the basket of your air fryer with cooking spray. This will prevent the patties from sticking.
Place the patties in the air fryer basket, making sure they are not overcrowded. You may need to cook them in batches.
Air fry at 375°F (190°C) for 10-12 minutes, flipping halfway through, until the patties are golden brown and cooked through. The internal temperature should reach 165°F (74°C).
Let the patties rest for a few minutes before serving. This allows the juices to redistribute, resulting in a more tender and flavorful patty.
