2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon paprika
Salt and pepper to taste
4 tablespoons unsalted butter
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 teaspoon nutmeg (optional)
Fresh parsley, chopped (for garnish)
Cooked pasta of your choice (fettuccine is classic!)
Instructions
Preheat your air fryer to 380°F (190°C). While it’s heating up, prepare the chicken. In a small bowl, whisk together olive oil, garlic powder, onion powder, paprika, salt, and pepper. Rub this mixture all over the chicken breasts, making sure they’re evenly coated.
Place the seasoned chicken breasts in the preheated air fryer basket, making sure they are not overlapping. Air fry for 15-20 minutes, flipping halfway through, or until the internal temperature reaches 165°F (74°C). The timing will vary depending on the thickness of your chicken breasts.
While the chicken is cooking, let’s get that creamy Alfredo sauce going. In a medium saucepan over medium heat, melt the butter. Add the minced garlic and cook for about 1 minute, until fragrant. Be careful not to burn the garlic!
Pour in the heavy cream and bring to a simmer. Reduce the heat to low and stir in the grated Parmesan cheese and nutmeg (if using). Continue stirring until the cheese is melted and the sauce is smooth and creamy. Season with salt and pepper to taste. You can adjust the consistency by adding a little more cream if needed.
Once the chicken is cooked, remove it from the air fryer and let it rest for a few minutes before slicing. Serve the sliced chicken over cooked pasta, and generously pour the Alfredo sauce over the top. Garnish with fresh parsley, if desired.
